This is what labskaus looks like in Hamburg:
My great-grandma was from Hamburg, and i tried to dig up an old family labskaus recipe, but was only pointed to a book....
Nearly all the ingredients are pickled, and you'll definitely need a mincer for this.
1.5 kg corned beef (1 kg beef and 0.5 kg pork)
water
4 bay leaves
2 onions
10 peppercorns
salt
20 mustard seeds
---------> cook until the meat is done, then mince
8 onions (medium sized)
30 g lard
----------> chop onions and sizzle in lard, then add to the minced meet
2.5 kg potatos
-------->cook, peel and mince
4 herrings (actually "matjes" - young herring, pickled)
4 pickled cucumbers
1 kg beetroot (pickled)
-------------> mince
mix everything and season (with pepper and salt)
serve warm-ish (will turn into concrete when left too long) and with a rollmops (rolled-up pickled herring) and fried egg.
I seem to remember that we never had the beetroot minced up with everything else, but had it as a side dish. Instead there was more cucumber in it
(when i wasn't a veggie...)
