Basically, if you run vertically at a player with the ball he can pass either side of you into midfield or lpay sideways to a full back or center back. It's ineffective.
If you curve your run (e.g. left to right as Brewster is) and have your midfielder pressing against theirs, then it means the defender has no option but to either pass into midfield (high interception risk) or pass wide to his full back. Given the risk of #1, #2 tends the only outcome. This means you cut the pitch in half as that press has forced the center back to turn and play to his left. If you then have a compact shape you can position yourselves almost entirely in that half of the pitch (similar to how we did vs Hoffenheim). This means they need to play through your shape with less players as they will have players spread out evenly on the pitch. So it will be 10 v 7 in your favour in the area of the pitch they are trying to play through. This also means from a counter attack perspective, you immediately have numerical advantage to play through them if you win the ball.
Their option then is to try to switch pass from left, where outnumbered, to the right where they likely have one or two free players. However these passes have lower success rates and any turnover here, especially as we would have Moreno & Mane there, will usually mean players with extremely high pace having a lot of space to run into at your defence. Effectively leaving them with only risky passing options and threats of dangerous counter attack whichever they chose. And given even the best players in the world have 90% pass success and give the ball away from time to time, you are almost guaranteed to give up a few dangerous counters per game - of not a lot more because pressure forces more mistakes and turnovers.
