Like actually smoked yourself? I've been curious about trying that having seen how to do it with tin foil and BBQ wood chips on jamie oliver recently...


And I forgot to mention. You just HAVE to have some bucks fizz in front of an open fire on christmas morning while the bird and ham is in the oven.

After a lifetime of rich Indian food, I just find tradtional turkey too bland, don't like it.

It will be Pronthe (typical punjabi breakfast) in the morning, almost a tradition that we do this on Xmas day, and something with Chicken in the afternoon. All topped off with a bottle or two of Chiva Regal with friends and family.

Aye, Pronthe are mint - have them every Saturday morning. Do you prefer aloo, mulee or mithe? I'm a mithe kind of person.

Try some Duck if you haven't before, I'm the same with Turkey don't find it too exciting.

Reading this thread is making my mouth water, espeically some of the more culinary focused posts.  :lickin

One thing that I would hate about living in Oz.

For a proper christmas it needs to be fucking freezing, preferably snowing, big blazing fire in the grate, sit down hot dinner, dodgy jumpers etc.

Christmas in australia, sitting on a beach in the heat having a BBQ just wouldn't seem special and would probably depress me rather than cheer me.

Fair point. But I'm looking forward to having a totally untraditional Xmas, as far as I am concerned I will be hanging out with people I like so it should be fun, and I'm looking forward to the novelty of it.

Plus I've got a "Glass half-full" kind of mentality so I'd prefer to focus on the fun side of it rather than wishing for the traditional side I can't have (or could have if I spent 1000+ quid on flights)

EDIT: all that said, you may well be right and I may hate it and wish I'd come home!! But I'm sure with enough booze I'll manage to forget to worry :D

Nah, home made as in buying the smoked salmon, prawns, leaves and making the cocktail from those ingredients. The prawn and salmons are together in the same dish.

Used to do the bucks fizz stuff too! That's now been replaced by the 2 pint pub trip :D

I still would like to try some home smoking of salmon - it looked good - though it is for a hot salmon recepie rather than cold - but as I do my salmon with a fresh hollandaise, that's no problem.

After 10 years here it still doesnt feel like Christmas. Which is fantastic as far Im concerened because 'Christmas' is a load of bollocks anyway. So I just see it as a big weeks holiday for the whole country in the middle of the summer.

Everyone gets prezzies just to say thanks for being a mate/wife/kid etc. Followed by a feast of food that is suitable for that time of year. So for us its a BBQ. For those in the cold a huge roast is of course more suitable. Mix it with a shit load of booze and the bonus is most actually get a day off after to recover. Fuck all that religous shite!

It does get quite cold in Melbourne in winter and dark early so many ex-pats have 'Christmas in July' parties. Any excuse for a piss up really  :D

As im taking on the task of cooking the turkey I 've been doing a bit of reading, but might need a bit of help off the cooking experts here:

1) I should cover the turkey loose with foil, in a tent like shape. Yes? How? Meaning I can open the tent like foil from the top?

2) Seasoning it, give it a good old rub with butter or oil, then salt and pepper over the top?

3) Cook it with the breast down so that the breast dont dry out? Normally seen them cooked the other way.

4) Streaky bacon, when do I apply that, at the start, midday?

5) Basting, just get a large spoon and pour the juices at the bottom over it every so on?

6) Im guessing the cooking time will come on the packaging or if I get from a butcher he'd tell me?
