Dunno what it was just flung everything in a pan. It had mango chutney in as well.

This thread is amazing. It along with http://www.redandwhitekop.com/forum/index.php?topic=239362.0 are the two best on here.  I'm really jealous of you lot being able to make these curries from scratch.  I'm a big fan of my chillies but I usually use them in conjunction with a sauce to add some more heat.  I love Thai curries, although someone stated earlier that strictly speaking these aren't curries.

How do you define a curry?

I have a rather good smelling Thai red curry bubbling away :)

Did a huge batch of green curry for the freezer om Monday. Nigel Slater's recipe is superb.

Not tried making my own red version yet though, so any suggestions welcome  :wave

I've never had a Thai curry that I've really liked the taste of. And I love Thai food otherwise, absolutely adore it.

Just went onto the spicebox.co.uk website and got a Jalfrezi Masala and Rogan Josh Masala spice mix. My mum's just bought one of those slow cookers from tesco so going to try cooking it in there. Get some lamb, brown off the meat, Mix all the spices meat and tomatoes together in the slow cooker. Put it on a low heat before I go to work and when i come in I'll have a lamb Rogan Josh waiting for me :lickin

Would have to be very lean for me, not a great fan of lamb. Chopped up lamb steak or something. Only problem might be that it would break down a bit too much if you're slow cooking it.

I live in Thailand, Bangkok. And for lunch today I had the mother of all curries. Forget Indian. This was the business. It was initially delicious, just the right mix of chillis and whatever else they put in, maybe a bit of fish sauce and lemon grass, garlic.  About 5 minutes after I'd wolfed it down, I kid you not, I had to go and sink my face into a bowl of water in the bogs. I am still in shock now and its 5 hours later. Plus It gave me a raging hard on for about an hour. Not easy when youre teaching....

Have you had a Chicken Tikka Masala in the UK? Or a Balti from B'ham? Not that I disagree with you but those are incredible too.

Going to have a Vindaloo tonight me. Always request it extra spicy and get a Cobra/Kingfisher with it. :thumbup

As i was eating it got me thinking why Indian food is butt of jokes in America...is it too spicy for them or what.

That Rafi Spice box is amazing. Was a little worried as I am pretty crap in the kitchen. My curries have either come from a jar or tin or microwave meal. I can manage them so was a little daunted with what I had to do. But once it arrived I was sorted. The slow cooker was amazing as It kept the meat juicy and didn't overcook the sauce.

Will definatly be using it again.

Tut - tut sir.
When you need a nice bit of fodder, and you're doing the weights quite a bit, this curry will have the taste to satify
your buds, and also the extra bits of protien to knock the weights out. Honest to god.
Oil - heat it up
Onion. chop it and fry
Sweetcorn -add to onion after 3 minutes,with a touch of curry powder that will soak into the corn.
rice -boil
Throw in garlic, chillies, turmeric, chilli powder, coriander powder and tomatoes
Tuna- add to fried sweetcorn,onion - add powders of choice.
Plate up, on rice,cover in chicken and mushroom sauce.
Finish off with cut jalapinos.
And garlic bread.

Destroy,

Absolutely love making curries, such good fun experimenting once you have all the spices.

For a fool proof curry the following, by Atul Kochar is brilliant:

Ingredients
2 Potatoes, peeled
1 Cauliflower, trimmed
3 tbsp vegetable oil, or mustard oil
1 tsp Nigella seeds, or onion seeds
2 Cloves
2 cardamom pods
2.5 cm cassia bark, or cinnamon stick
1 Bay leaves
1 tsp Turmeric
1/2 tsp red Chilli powder
1 tsp Salt
1 tsp Sugar
300 ml water
2 Tomatoes, cut into wedges
200g Yogurt, lightly whisked
1 tbsp coriander leaves, finely chopped
1 tsp Garam masala
Conversion Calculator

Method
1. Cut the potatoes into wedges. Cut the cauliflower into small florets.

2. Heat the oil in a sauté pan or frying pan and lightly fry the potato wedges and cauliflower, turning, for 3-5 minutes. Remove and set aside.

3. Add the nigella or onion seeds, cloves, cardamom pods, cassia or cinnamon and bay leaf to the oil remaining in the pan, and gently cook for a minute or two until the spices crackle.

4. Return the potatoes and cauliflower to the pan and add the turmeric, chilli powder, salt and sugar.

5. Mix well and add the water. Bring to the boil, reduce the heat and simmer for about 20 minutes until the potatoes are just cooked. Add the tomatoes and the yogurt, bring to a simmer and cook for 5 minutes

6. Add the chopped coriander and sprinkle with garam masala to serve.
