That’s a fair point and of course anyone is entitled to have something cooked the way that they want it, we’re not in the 80s anymore where it was fashionable to kick people out of your restaurant for ordering something differently from how you feel that it should be cooked.

That said, whatever anyone says steak is more tender, more flavoursome, juicier and generally all round more palatable if it is cooked to the level that maximises its structure. The sweet spot varies depending on the cut, you’d cook flat iron or bavette longer than you’d cook fillet for, for example, and if people’s taste is for meat which is cooked all the way through (which will be to a core temperature of around 70 degrees) then there are far better choices (including those which include beef , for example a braised beef cheek) than steak - I’d expect a good waiter to make that point even if it is often ignored (which I can tell you from experience, it is).

My problem is that my missus is a better cook than pretty much every chef at any restaurant I've ever visited. She cooks things to perfection.

She cooks the steaks in our house by;

Grilling it it then pan fries it with mushrooms and onions and then sears the outside for a minute to give it that extra bit of goodness and really seals the flavour in. She also makes her own peppercorn sauce.

Not quite sure how you'd define that, but it doesn't seem to be the way restaurants do. In her younger days she used to work in a restaurant and she can cook anything.

Makes it very difficult when you go out for a meal. What others describe as 'amazing' or 'marvellous' I'm thinking "Me missus does this much better"

I like to think I can cook pretty well, so when we go out it tends to be to places that do high level food, or food I just couldn't be arsed making at home, like Japanese, Tapas etc

I rarely get steak while out, unless someone else chooses to go to a steak specific place, but they tend to offer cuts that aren't as easy to get at home.

Yeah to be honest, we only really eat steak when we're on cruise ships.

The English ones tend to be meh, but some of the American ones (NCL, Royal Carribean, Princess) are amazing. Special mention to Celbrity as well.

Also P&O do a speciality restaurant where they give you it raw on a lava plate and you cook it (or in my case burn it) to perfection :)

Yeah I'd only ever choose steak when I'm at a specialist Steak place, and I would very very rarely choose to go to one of those myself, it's usually for work nights out I end up in one.

The price isn't really justified for what you get compared to what you can do at home for much less.

With steak, as indeed with most food, it’s all about the quality of the product.

I’ll rarely order steak out because you tend to pay a lot of shite meat, but I’ve no issues with (rarely) paying £40 for a steak from somewhere like Hawksmoor or STK if it’s decent (there are cheaper alternatives, there’s a string of restaurants called Flat Iron which specialise in the cheaper cuts).

People think that restaurants make some mad mark up on steaks but it often isn’t the case, I rarely eat it at home because to get a 300g piece of grass fed ribeye, for example, is about £15.00 just for the meat, then you have to consider everything else which goes into serving it in a restaurant.

Medium rare, maybe a tad under, with a really good sear. So many places don’t have the pan hot enough so a lightly cooked steak ends up with hardly any sear.

I've asked that before, are veggies and vegans happy to see the extinction of chickens, cattle, pigs, sheep etc. They can't be allowed to breed wild as they will be in competition with us for food and we'll win that battle.

Not the be the "I think you will find" guy; but I think you will find that it is not actually blood but is myoglobin.

Fair play on the no meat - I know that I can do a damn good job of making a tasty veggie meal but I struggle to get out of the mentality that it should have some meat or fish with it, even though often times the veg is the best part of the meal!!

It’s worth pointing out that if the steak is leaking onto the plate it’s because it hasn’t been rested properly.

Once cooked to just under the required level (as the steak will co tongue to cook by virtue of the internal heat) it needs to be removed from the pan to allow the juices to leak out and the meat to become more tender, that way you won’t get it on the plate.

I hate the acrid smell of bacon cooking… unless it’s farm stuff it gives off a chemical odour.

Generally I’m not a fan (don’t hate it, but it’s not great).

It's weird, I used to love a breakfast bacon sarnie but I have been going off them the last few years ... or at least my tastes are changing in the regard. I used to only eat unsmoked back, and now prefer smoked streaky (but generally wrapped around or chopped up and put in something).

The worst bacon is the rubbery stuff in prepacked sandwiches, vile stuff.

I think it's because I come from an era where my mum couldn't afford the best cuts so they were full of fat 'which is good for your brain' and you had to clear your plate.

Unhappily chewing fat off bacon for 20 minutes put me off it for life. Even that crispy minging shit.
